Summer Ideas

I am so excited for Summer to get here! I plan on spending a lot of time at my parents pool with our friends. BUT, I'm sure Pinky will get bored at some point so I will probably do some school with her. I need ideas of fun family friendly, budget friendly things to do. Can you all help me with ideas. I do have many ideas but I could always use more. So have at it...

Tasty Thursday

Well, I failed to get a new recipe up and ready for you all, I'm very sorry. So I thought I would post a few links to some of my favorite places to look for recipes. Where do you go to get recipes? Unfortunately I used to always go to my cookbooks but, with so many websites out there it's actually easier to find what you need online. Oh, my poor cookbooks, I bet they're lonely.

Tasty Thursday {Chicken Fried Rice}

One thing you all need to know about me is I LOVE to cook. It's been a love of mine since I was probably 12. I knew I was somewhat good when my Dad would let me cook our dinners and he would ask for seconds. He was the cook in our house and was good at everything {still is}. My Mom was fantastic at making Mac and Cheese, and good bowl of cereal! Nah, she's not that bad...she just specializes in a few things and there's nothing wrong with that! Love her!

So this meal is something I just kind of came up with and when my Warrior said that he loved it, well it made my day, so it's a keeper. I changed up how I usually make this meal, and it turned out great! Try it out and tell me what you think.

Ingredients
1-2 Large Chicken Breast
2 C Brown Rice {uncooked}
1 C Flour
1 C Skim Milk
1 Egg
2 C Panko Crumbs
Salt and Pepper to taste
Vegetable Oil
1 Package of Sun-Bird Fried Rice seasoning.
1 C Kikkoman Sweet and Sour sauce

Directions
Cut the chicken into cubes. Roll each cube in the Flour, Salt & Pepper mix. Shake off the excess. Dip into the Milk and Egg mix. Then roll in the Panko crumbs. Set aside chicken. In a large skillet or wok heat your vegetable oil then place the chicken pieces in the heated oil. I use tongs to do that, so I don't get splattered with the hot oil. While the chicken is cooking boil the water for the rice {use the amounts noted on the rice box}. Once the chicken is cooked remove it from the pan and the cooked rice to the pan. Toss the rice around a little bit in the oil, add more if needed, then add the seasonings packet. Stir till all is mixed then add the chicken again and toss till all is combined. Serve with the heated Sweet and Sour sauce. You can also add the normal stir fry veggies, but my Warrior doesn't do veggies :)

A Little Housework

In our house we believe that EVERYONE pitches in with housework. Nothing to major but it's mandatory. Today I taught Pinky how to start the washing machine. Before that, she had to separate our laundry into Towels, Colors and Whites. She did great, she even put them in their own hampers.

Since she's still a little short to reach the washing machine knobs, I had her figure out how to climb on top of it and sit on the side. Here's something you need to know about my sweet Pinky...she doesn't try very hard to figure things out by herself if her Mommy or Daddy are around. She wants us to figure it out for her. No can do buck-o! We were in our tiny laundry room and I had her use problem solving skills to get on top. Simple to older kids and adults but when you're 5....not so easy. She did great, she used her upper arm strength and walked up the wall and climbed on. I was so proud!

Anyway, this isn't a post about how to do laundry but it's a post about not looking past the opportunities to teach our children lifelong skills. I've taught Pinky how to empty the dishwasher and it helps so much. Every Sunday morning before church she runs outside to get the paper for Warrior. Pinky also puts her clothes away, she helps me cook and loves to put away the groceries from the store. These are little things but in the end they will be very BIG things that she will pass on to her children and they will honor her husband!

I'm so excited, UPS just dropped off my curriculum for next year! We will be using Five in a Row. Pinky LOVES to read and I think this will work so well for us. I'm hoping to get my year planned out this Summer, I'm a planner what can I say.

Tasty Thursday {Candy Bar Pie}

I got this VERY simple recipe out of a Taste of Home magazine many years ago. I loved it and I make it for lots of gatherings. I've also twisted it a bit, instead of using butterfingers I will occasionally use snickers, watch out...I'm a rebel! Make it and let me know what you think

Candy Bar Pie

Ingredients
1 Graham Cracker Crust
4 Butterfingers or Snickers or whatever your favorite candy bar is
1 8oz package of Cream Cheese {softened}
1 8oz carton of Whip Cream

Directions
In a small bowl, beat the cream cheese until smooth. Fold in whipped topping. Crush the candy bars; fold 1 cup into the cream cheese mixture. Spoon into crust. Sprinkle with remaining candy bar crumbs. Refrigerate for 2-4 hours before slicing. Yield:  6-8 servings.

Last month my menu board broke...I was super sad because I loved having it hanging in my kitchen. Pinky likes to know what we are having for meals so it helped her see ahead of time. I didn't really know what I wanted to do about a new one, but my creativity came through and I LOVE this new one so much more! What do you think?

Our Daily Schedule

I know when I was researching the idea of homeschooling, I really wanted to know what a typical day looked like. At the time I wasn't aware of all these fantastic blogs so I really didn't find much. I'm very structured and I NEED to know what's coming up, I don't do well with last minute things...I've gotten better though, my friends can vouch for that.

So I thought today I would let you see how we run our "typical" day.


6:30am I'm up and getting on the treadmill for my mile jog/walk while watching Netflix on our iPad.
7:00am Warrior wakes up and showers
7:15-7:45am Pinky and Cobalt wake up somewhere between these times.
7:30am I shower while Warrior is home, I'm a little OCD I have to take a shower within an hour of waking up.
8:00am Breakfast
8:30am Get ready for the day {brush teeth, get dressed, fix hair etc}
9:00am School starts. Pinky begins her handwriting while I sit with Cobalt getting him ready for nap time.
What we do during school time {we don't do everything each day}

Life Skills and snack

PE
Math
Art
Reading
Game
11:30am Free time and I start lunch
12:00pm Lunch at home with Warrior
12:30pm I clean up and the kids watch Clifford
1:00pm Outside time {weather permitting} if the weather is not good they play in one of their rooms
1:30pm The kids watch Barney
2:00-4:00pm Nap time for Cobalt and Reading/Rest time for Pinky. During their naps I try to get some housework done, do some blogging but generally it's my only down time so I take FULL advantage of it.
4:00pm The kids wake up have a snack and play
4:30pm I start dinner
5:00pm The kids go outside till Daddy gets home {again weather permitting}
5:30pm I try to have dinner done and on the table.
6:00-7:30pm Family time
7:30pm Warrior gives the kids a bath while I clean up the living room then I get Cobalt dressed for bed
8:15pm Cobalt goes to bed, Warrior reads Pinky a book
8:30pm Pinky goes to bed and we pray before lights are out
8:30-10:30pm Ruby and Warrior time!

So in a nutshell that's what a normal day looks like in our house. However, we rarely have normal days...so I get this day just about three times a week. I'm looking forward to having more of these days though...and then Summer will be here and everything changes again!
