One thing that works good for those busy times or long road trips is packing a cooler with crackers or presliced french bread. Add a block of cheese, some pepperoni, and fruit. Healthy and easy.
I try to do more crockpot cooking or I'll cook a whole chicken on Monday and stretch it for 2 nights, sometimes 3 with night 3 being chopped chicken, tomatoes, cheese, peppers/onions, lettuce all rolled in tortillas. Day 2 is usually a chicken casserole. My problem is just getting the ingredients all bought ahead of time!
Your menu sounds delicious! Lots of good food planned! Happy cooking and eating too :-).
Stopping by from the HHH! Hope you have a wonderful week!
We're having a crazy week here too. I've planned easy menus for lunches and dinners that the kids can help make. Lots of toast with PB and fruit for breakfast, big salads, some pizzas with lots of veggies, veggie burgers and tater tots, spaghetti and broccoli for lunch and dinner...
We can't really afford to eat out so if we get stuck in town I'm a super bad mom and we grab the $2 pizza at Costco :0) I also try to keep a big bag of trail mix in the car.
I'm a new follower!
Have a blessed - even if it's crazy - week!
